Abstract
The paper presents analytical dimensions and preliminary empirical evidence relating to a research that aims to study the process of mutual shaping of food as a scientific topic, an object of public policy and a professional market in Argentina between the end of the 1920s and the mid 1940s. The first studies on nutrition in the country and the first state initiatives in this field, the connection to the international context and the creation of top-level training areas are considered
